Sausage And Sweet Potatoes With Honey Garlic Sauce

Ingredients

Italian or chicken

large sweet potatoes
peeled and cubed

honey

garlic

soy sauce
or tamari for gluten-free

olive oil

paprika
Salt and pepper
to taste
Fresh parsley
chopped (for garnish)
Instructions
Peel and cube sweet potatoes into 1-inch pieces; mince garlic.
Heat olive oil in a skillet over medium heat. Brown sausage for 5–7 minutes, draining excess grease if needed.
Add sweet potatoes and cook 5 minutes, stirring until lightly golden.
Whisk honey, garlic, soy sauce, paprika, salt, and pepper. Pour over sausage and potatoes.
Cover, reduce heat, and simmer 10 minutes until potatoes are tender. Stir once midway.
Garnish with parsley and serve hot.
