Ingredients
1tbspcoconut oil
1tspfresh gingergrated (or ½ tsp ground ginger)
3clovesgarlicminced
¼cupThai red curry paste
2tbspchicken bone broth concentrate
½cupboiling water
1can13.5 fl oz coconut milk
1tspfish sauce
Juice of 1 lime
5chicken thighsfat trimmed
1½cupsjasmine rice
Chopped spring onions
Fresh coriander
Lime wedges
2tspchili oiloptional
Instructions
Heat coconut oil, then sauté garlic and ginger for 3–4 minutes until fragrant.
Stir in red curry paste, then add bone broth concentrate, boiling water, coconut milk, fish sauce, and lime juice.
Add chicken thighs, cover, and simmer on medium-low for 20 minutes until tender.
Cook jasmine rice separately according to package directions.
Slice the cooked chicken, place over rice in bowls, and pour over the coconut broth.
Top with spring onions, coriander, chili oil if desired, and lime wedges.
