Preheat your oven to 350°F (175°C) and pour the melted butter into a 9×13-inch baking pan, spreading it evenly to cover the bottom.
In a large bowl, whisk together milk, vanilla extract, and sugar until smooth. Add flour, baking powder, salt, and 2 teaspoons cinnamon, stirring gently until just combined to keep the batter light.
Spoon the batter over the melted butter in the pan without mixing. Sprinkle brown sugar evenly on top, then carefully pour the hot water over the mixture, leaving it undisturbed to create the signature cobbler effect.
Bake for 30–35 minutes, until the top is golden brown and bubbling slightly along the edges.
Mix ¼ cup sugar with ½ teaspoon cinnamon in a small bowl and sprinkle over the cobbler immediately after removing it from the oven for a sweet, crunchy finish.
Let the cobbler cool for about 10 minutes before serving. Enjoy warm, ideally with vanilla ice cream or a dollop of whipped cream.
