Ingredients
1 ¼cupsgluten-free flour
1teaspoonbaking soda
½teaspoonsea salt
½cupunsalted buttersoftened
½cupgranulated sugar
¾cupbrown sugarpacked
¾cupcreamy peanut butter
1large egg
2teaspoonsvanilla extract
1 ¼cupsmini marshmallowsfrozen
Instructions
Freeze mini marshmallows in an airtight container for at least 2 hours.
Preheat oven to 350°F and line a baking sheet with parchment paper.
Whisk gluten-free flour, baking soda, and sea salt together.
Beat butter, granulated sugar, and brown sugar until light and fluffy.
Mix in peanut butter, egg, and vanilla until smooth.
Quickly fold in frozen marshmallows.
Gradually mix dry ingredients into wet until a soft dough forms.
Scoop 2 tablespoon portions onto baking sheet.
Bake 10 to 12 minutes until edges are lightly golden.
