Raspberry Sugar Cookies are soft, lightly tangy cookies made with cream cheese and freeze dried raspberries, finished with a tender crumb and optional chocolate drizzle.

Ingredients
2cupsfreeze dried raspberriesdivided
3cupsall purpose flourspooned and leveled
1½teaspoonsbaking powder
½teaspoonsalt
1cupunsalted buttersoftened
4ozcream cheesesoftened
1cupgranulated sugar
1large eggroom temperature
1teaspoonpure vanilla extract
1teaspoonalmond extractoptional
4ozsemi sweet or white chocolateoptional
Instructions
Crush most freeze dried raspberries into powder and coarsely chop the rest.
Preheat oven to 350°F and line baking sheets with parchment.
Whisk flour, baking powder, and salt together.
Beat butter and cream cheese until smooth, then mix in sugar.
Add egg and extracts, mixing just until combined.
Gradually mix in dry ingredients to form a soft dough.
Fold in raspberry powder and chopped raspberries gently.
Drop dough onto baking sheets, spacing evenly.
Bake 11 to 13 minutes until edges are set.
Cool briefly on the pan, then transfer to a rack.
Optionally drizzle with melted chocolate and sprinkle with raspberry powder.
