For the Shrimp
1lblarge shrimppeeled and deveined
1tspCajun seasoning
½tspsmoked paprika
¼tspcayenne pepperoptional
1tbspolive oil
For the Sauce
2tbspunsalted butter
1tbspolive oil
1small onionfinely diced
1small green bell pepperfinely diced
1celery stalkfinely diced
3garlic clovesminced
¼cuptomato paste
1tspWorcestershire sauce
½tspsmoked paprika
¼tspcayenne pepper
½tspdried thyme
½tspdried oregano
1cupchicken or seafood stock
1tsphot sauceor to taste
¼tspsalt
¼tspblack pepper
For Garnish and Serving
2tbspchopped fresh parsley
Lemon wedges
Cooked white ricegrits, or crusty bread
Instructions
Toss shrimp with seasoning and set aside.
Sauté onion, bell pepper, and celery in butter and oil until soft, then add garlic.
Stir in tomato paste and spices, add stock, Worcestershire, hot sauce, salt, and pepper; simmer to thicken.
Sear shrimp in another skillet until pink.
Add shrimp to sauce and simmer briefly.
Serve over rice, grits, or bread with parsley and lemon.
