Ingredients
4large Russet potatoespeeled and chopped
1eggbeaten
½cupshredded cheddar or mozzarellaoptional
1teaspoonsalt
½teaspoonblack pepper
2tablespoonsflour or breadcrumbs
Baking spray or oil
Fillings
1cupcooked ground turkeyseasoned
3scrambled eggs
1cupsautéed spinach and mushrooms with garlic
½cupshredded cheddar
¼cupsour creamoptional
2tablespoonschopped chives
Instructions
Peel, chop, and boil potatoes until tender, then mash while still warm.
Mix in beaten egg, salt, pepper, cheese (optional), and flour or breadcrumbs until the mixture holds shape.
Press into greased muffin tin, shaping into small nests.
Bake at 400°F for 20–25 minutes or pan fry in oil until golden and crisp.
Fill with your choice of turkey, eggs, spinach mix, cheese, or sour cream. Garnish and serve warm.
