Ingredients
1batch sugar cookie doughstore bought or homemade
12ozcream cheeseroom temperature
6tablespoonsbutterroom temperature
2cupspowdered confectioners’ sugar
1teaspoonvanilla extract
Assorted colorful fruits such as strawberriesblueberries, kiwi, mandarins, and grapes, cut into bite sized pieces
Instructions
Preheat the oven according to the sugar cookie dough instructions, usually 350°F. Roll the dough onto a parchment lined baking sheet and shape it into an egg or round pizza. Trim the edges if needed so it bakes evenly.
Bake following the package or recipe directions, about 12 to 15 minutes, until lightly golden and set. The edges should be firm while the center stays soft. Let the cookie cool completely.
In a large bowl, beat the cream cheese and butter until smooth and creamy. Gradually add the powdered sugar and mix until fluffy, then stir in the vanilla. If the frosting feels too soft, chill it for about 10 minutes.
Spread an even layer of frosting over the cooled cookie, leaving a small border if you like a cleaner edge.
Arrange the fruit on top in patterns or sections by color, gently pressing it into the frosting. Chill for 20 minutes before slicing for neater pieces.
