Tropical Coconut Pineapple Rice is a soft, fluffy rice dish cooked in coconut milk and finished with pineapple, lime juice, and toasted coconut for a fresh tropical flavor.

Ingredients
1cupjasmine rice or basmati rice
1cupfull fat canned coconut milk
½cupwater
1cuppineapple chunks fresh or canned and drained
¼teaspoonsalt
⅓cuptoasted shredded coconut
1tablespoonlime juice
2tablespoonschopped cilantro optional
Instructions
Rinse the rice under cold water until the water runs clear.
Combine rice, coconut milk, water, and salt in a saucepan and bring to a gentle boil.
Lower heat, cover, and simmer 15 to 18 minutes until the liquid is absorbed and rice is tender.
Remove from heat and let rest, covered, for 5 minutes.
Fluff with a fork, fold in pineapple and lime juice, then top with coconut and cilantro before serving.
