For the Cookies
1cupbuttersoftened
¾cupgranulated sugar
13 oz box lime Jello (set aside 1 tablespoon for frosting)
2eggs
2 ½cupsall-purpose flour
1teaspoonbaking powder
½teaspoonsalt
For Rolling
¼cupgranulated sugar
For the Frosting
¼cupbuttersoftened
1ozcream cheesesoftened
2cupspowdered sugar
1–2 tablespoons milk
1tablespoonlime Jello powder (from above
Instructions
Preheat oven to 350°F and line baking sheet with parchment or silicone mat.
Beat butter and ¾ cup sugar until fluffy, then mix in lime Jello powder.
Add eggs one at a time, mixing well after each.
Whisk flour, baking powder, and salt in a separate bowl, then gradually mix into wet ingredients.
Scoop dough into balls, roll in ¼ cup sugar, and place on baking sheet.
Flatten tops gently with a glass.
Bake 9–11 minutes until edges are set and centers slightly glossy; cool 3–5 minutes on sheet, then transfer to rack.
Beat butter and cream cheese, add powdered sugar, milk, and reserved Jello powder; mix until smooth.
Frost cooled cookies and let sit 10 minutes before serving.
