These cookies are so chocolatey, soft, chewy and SUPERR FUDGY with a crispy/crunchy outer shell. Not only does the entire pan disappear in seconds, but they will make everyone who tries them begging for another batch!

TO MAKE FUDGY BROWNIE COOKIES, YOU WILL NEED

  • 120g dark chocolate, I used Bakersfield chocolate buttons
  • ¼ cup butter
  • 1 large egg
  • ½ cup brown sugar
  • 1 tsp vanila, I used French vanilla flavorade
  • ½ cup all-purpose flour
  • 2 tbsp cocoa powder
  • ¼ tsp baking soda
  • ¼ tsp salt

HOW DO YOU MAKE FUDGY BROWNIE COOKIES?

Step 1: Preheat oven to 350°F (175°C). Line 2 cookie sheets or baking trays with parchment paper (baking paper).

Step 2: In a medium-sized bowl, mix together the cocoa powder, white sugar, butter. Beat in egg and vanilla until fully incorporated.

Step 3: Add the flour, baking powder, and salt; stir the dry ingredients first before mixing them through the wet ingredients until a dough forms.

Step 4: Scoop out 1-2 tablespoonful of dough with a cookie scoop (or small ice cream scoop), and place onto prepared baking sheets.

Step 5: Bake in a preheated oven at 350°F for 10 minutes.

Step 6: Allow to cool on the cookie sheet for 10 minutes before transferring to wire racks to cool.
