1. Ingredients for Breakfast Sausage

  • 1 ½ pounds ground pork, unseasoned ground pork, avoid Italian sausage.
  • 4 cloves garlic minced for aromatics and flavor.
  • 2 tablespoons light brown sugar. It adds just a hint of sweetness to balance out the savory spices.
  • 1 ½ tablespoons of finely chopped fresh sage
  • 1 ½ tablespoons of finely chopped fresh thyme
  • 1 ½ teaspoons of kosher salt
  • 1 teaspoon of black pepper
  • ½ teaspoon crushed red pepper flakes
  • ½ teaspoon poultry seasoning
  • ½ teaspoon smoked paprika

1. In a large size bowl, combine the ground pork, paprika, salt, pepper, pepper flakes, brown sugar, garlic, sage, and thyme.

2. Cover with plastic wrap and set in the refrigerator for one hour. The ideal time would be overnight.

3. Slice the sausage into 12 equal pieces, then form each piece into a patty.

4. Set a large skillet to medium heat. The sausage should be cooked for about 4-5 minutes on each side, or until it reaches 165°F internally and is crispy browned on the outside. Serve right away.

If you have any leftovers, store them in an airtight container and put them in the refrigerator for up to 3 days. They are simple to rewarm in the microwave.
