If you are non-keto eaters, feel free to serve them with regular rice, mashed potatoes or roasted vegetables of your choice. They all taste so good. My family prefer mashed potatoes as they’re easy to make at any time.

Beef tips are stewed in a creamy flavorful sauce of beef broth, tapioca flour, ghee, garlic powder, salt and pepper until tender.

Ingredients

  • Sirloin Tips
  • 2 pounds cubed beef stew meat or sirloin tips

  • 1 tbsp olive oil

  • 1 clove garlic, minced

  • 1/4 tsp salt

  • pinch of pepper

  • Gravy
  • 2 cups beef broth

  • 2 tbsp tapioca flour, dissolved in 2 tbsp water (for Keto, sub 1/4 tsp xanthan gum)

  • 1 1/2 tsp ghee

  • 1/2 tsp garlic powder

  • 1/4 tsp salt

  • Pepper to taste

  • Mashed Cauliflower
  • 1 head of cauliflower, chopped-boiled or steamed

  • 2 tsp ghee

  • 1/2 tsp garlic powder

  • 1 tbsp chives (fresh or dry)

  • 2 tbsp coconut milk

  • 1/2 tsp salt

  • 1/4 tsp pepper

Directions

  • Sirloin Tips & Gravy
  • Heat some oil in a large skillet over high heat. Add beef, salt and pepper and cook on high heat for about 5 minutes; until beef is browned on all sides.
  • Pour 2 cups beef broth over beef and stir well. Bring to a boil then reduce heat.
  • Add dissolved tapioca flour, ghee, garlic powder, salt and pepper into skillet. Mix thoroughly and stir into beef.
  • Simmer on low with a lid for 30 minutes; or until beef is tender and gravy is thick.
  • Cauliflower Mash
  • Bring chopped cauliflower to a boil, about 10 minutes.
  • Drain liquid and pour into a food processor with garlic powder, chives, ghee, coconut milk, salt and pepper.
  • Blend until smooth and top with fresh chives. Make sure NOT over blend or it will turn into a soupy puree.
  • Arrange cauliflower mash into a plate. Top with beef tips along with creamy gravy. Garnish with fresh or dried parsley. Serve.

Notes

  • You may also cook the beef tips in the crock pot or instant pot if prefer.
