Ingredients:

  • 3 lb. bone-in, skin-on chicken thighs, and drumsticks
  • Kosher salt
  • Freshly ground black pepper
  • 2 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1 tsp. garlic powder
  • 1/2 tsp. cayenne pepper
  • 3 tbsp. extra-virgin olive oil
  • 1 large onion, chopped
  • 2 bell peppers, chopped
  • 4 cloves garlic, minced
  • 2 tbsp. tomato paste
  • 1 c. long-grain rice
  • 2 c. low-sodium chicken broth
  • 1 (14-oz.) can of diced tomatoes
  • 1  bay leaf
  • Freshly chopped cilantro, for garnish

Directions:

Step 1: Use paper towels to pat the chicken dry before seasoning it with salt and pepper all over. Combine cumin, oregano, garlic powder, and cayenne in a small bowl of chicken mixture.

Step 2: Next, heat the oil in a large skillet over medium-high heat. Cook until the chicken is golden, about 5 minutes per side. Remove the skillet from the heat and set aside on a plate.

Step 3: Heat the onion and pepper in the same skillet over medium heat. Cook for 5 minutes, or until soft. Cook until the garlic is fragrant, about 1 minute more, then stir in the tomato paste.

Step 4: Add the rice and continue cooking for 3 minutes, stirring often. Stirring up any browned bits from the pan’s bottom, add the chicken stock, diced tomatoes, and bay leaf. Bring to a boil, then add the chicken back to the skillet. Reduce heat, cover, and simmer for 30 minutes or until rice is soft and chicken is cooked through. Stir the rice occasionally to prevent it from adhering to the pan’s bottom. As needed, add more water or broth.

Step 5: Serve with cilantro after removing the bay leaf.

2. Creamy Steak Fettuccine

Ingredients

  • Kosher salt
  • 12 oz. fettuccine
  • 1 lb. sirloin steak
  • 2 tbsp. vegetable oil
  • Freshly ground black pepper
  • 2 tbsp. butter
  • 2 cloves garlic, minced
  • 2 tbsp. all-purpose flour
  • 2 c. milk
  • 1/2 c. freshly grated Parmesan
  • 1 tbsp. freshly chopped parsley
  • 1 1/2 c. halved cherry tomatoes
  • 4 c. baby spinach
  • 2 tbsp. balsamic glaze

Directions:

Step 1 Prepare pasta as directed on the package in a big pot of salted boiling water until al dente. Before draining the pasta, save 12 cups of water. pasta back into the pot

Step 2: Season the steak generously with salt and pepper and generously with oil on both sides. Cook the steak for 4 minutes per side for medium-rare in a large skillet over medium-high heat. Place on a platter and set aside for 10 minutes to rest. Slice the steak thin.

Step 3: Melt butter in a pan over medium heat. Add the garlic and simmer for 1 to 2 minutes, or until it is fragrant. Cook for another minute while whisking in the flour. Add the milk gently while stirring to remove any lumps, and simmer for 5 minutes or until the mixture is thick. Salt and pepper the dish, then stir in the Parmesan and parsley. Add the tomatoes and simmer for 2 to 3 minutes, or until they burst.

Step 4 Stir together the cooked pasta and 1/4 cup of the reserved pasta water in the skillet, adding additional pasta water as necessary. Toss in the spinach until it wilts.

Step 5: Drizzle a balsamic glaze over the top and add sliced steak.
