  • One 5½-pound brisket

  • 12 garlic cloves, peeled
  • 5 medium yellow onions, thinly sliced
  • 1 cup sherry wine
  • 3 cups beef stock
  • 2 sprigs of fresh rosemary
  • 2 sprigs of fresh thyme
  • Chopped parsley and chives, for garnishing

Directions

  • Preheat the oven to 350 degrees Fahrenheit. Dry the brisket with paper towels and liberally season with salt and pepper. In a large, wide Dutch oven or roasting pan, heat the oil over medium-high heat. Sear the brisket, turning as needed, for 20 to 25 minutes, or until completely golden brown. Place on a baking sheet.
  • Reduce the heat to medium and add the garlic and onions to the Dutch oven. Cook, stirring frequently, for 25 to 30 minutes, or until softened and caramelized.
  • Deglaze with the sherry, then add the stock and season with salt. Add the rosemary and thyme to the pot with the brisket. When the liquid begins to simmer, cover and bake until tender, about 3 hours. Remove from the oven and set aside to cool before refrigerating overnight.
  • Remove the brisket from the pot the next day and cut it into 14-inch slices against the grain. Return the meat to the pot and warm over medium heat; season with salt to taste. Before serving, garnish with chopped parsley and chives.

  • Melt butter in a 2-quart saucepan over medium heat. Cook for 2 minutes, stirring frequently until the onion is tender. Mix in the flour, salt, and pepper until well combined. Cook, stirring constantly until the broth and milk is bubbly and thickened.
  • Stir in the chicken and vegetables. Turn off the heat. Fill the pan with the chicken mixture. Seal and flute the edge of the second crust. Make several slits in the top crust.
  • 30–40 minutes, or until the crust is golden brown. Cover the crust edge with strips of foil during the last 15 to 20 minutes of baking to prevent excessive browning. Allow standing for 5 minutes before serving.
