Potato bake, also known as potato casserole is one of those meals you’ll typically find at a family barbecue, along with freshly grilled snags and lamb chops. This traditional potato dish has several variants depending on where you are from.

There are many varieties of this dish. You may have heard it referred to as “potatoes au gratin” which is the French name for a dish made of sliced potatoes roasted till the top is golden brown. The term “potatoes dauphinoise” refers to this dish, which has its roots in the Dauphiné area of southern France.

Another variation with possible English origins is scalloped potatoes. Whatever name you may know by now, it is one of those dishes that is celebrated widely.

  • Floury/starchy potatoes are the best option for baked potatoes since they have a nice soft and fluffy texture. Desiree, Sebago, and Yukon Gold are all excellent choices. However, we may use any available potatoes to prepare this at home and still have a delicious outcome. If at all possible, stay away from waxy potatoes because you’ll have to wait an eternity for them to soften in the oven. 
  • Use heavy cream to give the dish a deliciously creamy texture. If you don’t have heavy cream you can also swap it out for sour cream. The cream serves to substitute milk, which is typically used in potatoes au gratin, though the end result will have a slightly looser texture. Prepare tuna mornay white sauce if you don’t want to use the cream as a foundation.
  • Cheddar cheese is perhaps the best cheese to use for this dish. It gives the topping that magical golden brown color you know and love as well as giving the potato bake some sharpness to the flavor. If you’re feeling particularly naughty, add some more parmesan cheese to it.
  • Fresh garlic & onion are two ingredients that add some extra kick to this dish. If you don’t feel like cutting the real ingredients, use garlic and onion powder as a substitute.

  1. Preheat the oven to 180 C/360 F.
  2. Slice the potato into equal-sized mandolins as well as chop some onions and garlic 
  3. Place half of the potato slices in a large baking dish and layer them.
  4. Add a good pinch of salt and pepper on top, then scatter the onion slices and half of the minced garlic over the top. Pour the cream evenly over half of it.
  5. Follow the same procedure a second time, piling the remaining potato slices and scattering the remaining garlic and onion on top. Add the remaining cream and sprinkle the cheese on top. If desired, add a little extra salt and pepper as a garnish.
  6. Place it in the oven and bake for about one to one and a half hours. Add some aluminum foil on top of the dish to quickly browns the cheese top. Remove it from the oven and let it cool for a couple of minutes.
